Patrick Bouju P & G
Patrick Bouju P & G is a red wine from Auvergne, made from Gamay and Pinot Noir grown on the slopes of Gergovie. The vineyards sit on basaltic, volcanic soils, which helps give the wine its fresh, stony character. The Gamay comes largely from very old vines, adding depth without making the wine feel heavy. The grapes are fermented as whole bunches with native yeasts, then aged in stainless steel and amphora. In the glass, expect red fruit such as cherry, a light smoky note that softens with air, and a gentle spicy finish. It is a lively, flowing red rather than a powerful one. If you have time, open it about 30 minutes before serving. It works well with duck, beef tartare, or vegetarian dishes like lentils with pomegranate.
