Tastes Like: Orange, honey, sugarcane Aromas del Valle is a cooperative that was founded by Merly Cruz Rivera and Ivan Cruz Rivera in 2015. Aromas del Valle was created to provide support to producers, as well as increase transparency within the coffee supply chain. Today, the cooperative supports over 500 smallholder members in the regions of Jaén, San Ignacio & Cutervo. The cooperative promotes the development of high quality coffees through social, economic, technological and environmental support for members. This lot was produced by César Sampertegui, “A Pioneer of Innovation” César Sampertegui was among the first producers in Santa María to embrace experimentation. He not only is constantly innovating his processes but was also one of the earliest active members of the cooperative, contributing his experience and passion during its foundational years. The process for this washed microlot starts by selectively harvesting all ripe beans. The cherries are fermented in tanks for 96 hours; after the fermentation process, they are then pulped. They are then dried on African beds for at least 165 hours using ambient temperature.
