The operation traces back to founder Aaga Dinsa, who inherited the farm from his grandfather — a coffee grower in Kuri Kebele — and built it into a network now spanning 140 smallholder families across the region.Farmers deliver ripe cherry to Habtamu's own washing stations, where it's pulped and left to ferment for 48–72 hours, rested another 12 hours in fresh water, then dried slowly on raised beds for 10–12 days. It's a patient, hands-on process, and it shows in the cup.In the CupGrown above 2,000 meters and picked from heirloom 74110 and 74112 varietals, this coffee opens with rose and jasmine, moves into a bright lemon-lime acidity, and settles into ripe apricot and honey on the finish.
