Lemon Slice Crystal Candy

Cut from the same mould as the fruit itself, our Lemon Crystal Candy is shaped like a classic citrus slice, right down to the segmented detail and coloured in layers of pale yellow that catch the light like sea glass. The slow crystallisation process gives each piece a faceted, frosted surface that looks almost too good to eat. Almost. The flavour is clean and bright, softening into the characteristic kohakutou chew as the crystallised shell gives way. A small piece that earns a second look and a third one.
