EDINSON ARGOTE | SUDAN RUME
Sudan Rume is one of the rarest varieties in specialty coffee. An ancient Ethiopian heirloom, it's notoriously low-yielding and finicky to grow, which is exactly why it's so seldom seen outside competition lots and auction tables. Edinson Argote grows his on Finca Chorro Alto in Oporapa, Huila, at elevations that push the variety to its best. What makes this lot special is how much intention went into the processing. A double fermentation natural, built around a specific yeast culture, designed to coax everything this variety is capable of into the cup. The result speaks for itself. Marzipan sweetness anchors the cup, with bergamot flowers lifting through the mid-palate and ripe papaya trailing as a long, tropical finish. Rich, layered, and genuinely rare.
