SOTM: Mexican Lamb

Chipotle is a jalapeño that's been smoked and dried. That's where this one gets its heat — warm and deep rather than sharp. We've built August's sausage around it. Certified organic lamb, chipotle, orange, garlic, fresh coriander and spices. Smoky and citrusy, medium spice, and most people handle it easily. It's a chipolata, so it cooks fast and fits a tortilla without a fight. Naturally gluten free. Here for August only.
