Harvesting takes place at night and continues through the early hours of the morning. The three varieties included in the blend are vinified separately by variety and parcel. The winemaking approach is focused on preserving varietal aromas while also developing a sensory profile defined by fermentation-derived characteristics and maturation on fine lees. The grapes are handled through a gentle processing flow. The must is obtained exclusively through direct pressing. Fine lees settling is carried out for up to 12–14 days. The winemaking philosophy follows a “zero-zero” approach to the use of additives, relying on precision winemaking techniques that make it possible to produce wines with exceptionally low levels of SO₂. The principles of “simplified” winemaking are also respected, with interventions on both must and wine kept to an absolute minimum. A total of 69% of the blend is fermented in a diverse range of wooden vessels, primarily 500-litre barrels, complemented by 600-litre casks, 225-litre barriques, and 10- and 20-hectolitre vats in their second use. The 2025 blend consists of 61% Sauvignon Blanc, 34% Fetească Albă, and 5% Riesling Italico. The wine is aged for seven months on fine lees, with bâtonnage, to enhance the aromatic profile with complex secondary aromas. The entire production process involves only a single light filtration prior to bottling.
