"Juliana Quilla is a member of one of the most prominent coffee-producing lineages in the Puno region: the Quilla family. They possess a long history in Pacaysuizo, one of the most remote coffee-growing areas in Peru. Juliana acquired her extensive knowledge of coffee production from her father, Juan Quilla Laura. Juliana’s farm, Quillabamba, is located a two-hour walk from the only access road in Pacaysuizo. The farm consists of 1.5 hectares of Bourbon trees planted at intervals of 1.5 by 1 meter. The processing is meticulous: ripe cherries are picked and immediately fermented in water for 18 to 20 hours. To protect the local environment, wastewater is treated in sedimentation wells. Once washed, the parchment coffee is dried for 10 to 12 days on raised beds within a parabolic dryer. Readiness is determined through sensory evaluation, including the "tooth test" and visual checks for an ideal blue-green color. The physical demands of operating in such a remote location are immense. To bring the coffee to market, the family must carry 46 kg bags along steep, narrow paths. While the trek takes two hours without a load, the journey extends to nearly four hours when transporting the heavy bags to the nearest road.
