The result is a rounded, mellow-tart vinegar with a clean orchard-apple aroma that industrial cider vinegar rarely keeps.Because it's unfiltered and unpasteurised, a living "mother" may form after opening and a little natural sediment can settle at the bottom — both are signs of a living vinegar, not spoilage.
