Les Vergers Boiron Frozen Sudachi Purée – 1kg Professional-quality Boiron sudachi purée, made from 100% sudachi with no added sugar. The fruit is grown in small plantations in Tokushima Prefecture on Japan’s Shikoku Island, where sudachi has been cultivated for centuries. It is hand-picked while still green from September to the end of October to preserve its characteristic acidity. Supplied frozen in a 1kg pack, this ready-to-use frozen sudachi purée has a pale yellow colour and pulpy juice texture, with powerful acidity, distinctive peppery notes and a naturally sweet undertone. Boiron notes that production is extremely limited and around 4kg of fresh fruit is required to produce just 1kg of juice. Its intense, complex citrus character makes it particularly well suited to cocktails, drinks, pastry and desserts, as well as sorbets, ice cream, gelato and confectionery. Boiron highlights sudachi as an emerging citrus for both pastry and mixology and uses the purée in professional pastry preparations including crémeux, confit and jelly.
