Elegant sweetness, plush, bright and juicy Panela, candied citrus, peach, plum, tea-rose Juan owns El Pedregal farm (1920 masl) in Tarqui, a town in Huila Department in Southern Colombia. This lot consists of 100% Tabi variety, a hybrid of the two parent strains of Arabica: Typica and Bourbon, combined with Timor. It was designed to combine the disease resistance of Timor with the superior cup quality of Typica and Bourbon varietals. It is a fully washed process coffee. The fresh picked cherries are rested for 12 hours in concrete tanks before being pulped and then fermented for another 40 hours in tied off plastic bags. Afterwards, the parchment is dried between 18-20 days.
