The oyster blade comes from the shoulder and is one of the most versatile cuts you can buy as a whole piece. It has good marbling and a rich, beefy flavour, with a thin line of connective tissue running through the centre. Cooked low and slow, that tissue breaks down and gives the meat a soft, tender texture. Trimmed out, it leaves two flat pieces that make excellent steaks. Buying the whole cut gives you options. You can keep it in one piece for a braise or roast, portion it at home to suit what you're cooking that week, or simply cut it into steaks and eat around the sinew.
