Light and crisp, about a third the caffeine of coffee. How to drink it through the day Chai first, two heaped teaspoons boiled on the stove with milk and sugar in the pan. Assam mid morning, a heaped teaspoon, three to five minutes, milk optional. Green after lunch, let the kettle stand two minutes off the boil first, then two to three minutes in the cup.
