ETHIOPIA EPHTAH ANAEROBIC
PAPAYA | ORANGE WINE | VANILLA | CINNAMON | From the mountains of Lalesa, in the Gedeb area of Ethiopia, comes this exclusive Anaerobic coffee, produced at an altitude between 2,150 and 2,200 meters above sea level. An origin particularly suited to producing high-quality coffee, where climatic conditions, altitude, and post-harvest processing contribute to creating a distinctive and complex aromatic profile. The lot is composed of local heirloom varieties and is harvested mainly between December and January, during the main Ethiopian harvest season. The plants grow naturally in the shade of trees, especially Ensete, also known as false banana, according to a traditional farming system that characterizes the region's landscape. A controlled anaerobic process The uniqueness of this coffee lies in its anaerobic process. The cherries undergo controlled fermentation inside plastic barrels for about 9 days, creating an oxygen-free environment that promotes the development of intense, complex, and particularly defined aromas. At the end of fermentation, the coffee is transferred to the drying beds, where it remains for about 13–18 days. Slow and controlled drying is essential to preserve the quality of the bean and ensure uniformity and stability over time. Once the correct moisture level is reached, the coffee is stored in the station warehouse before being transferred to Addis Ababa for the subsequent stages. Lalesa: a project built on quality The Lalesa processing site is owned by Ephtah Specialty Coffee, which acquired the land in July 2023 and subsequently built the warehouse and drying beds in September of the same year. With an area of about 3.5 hectares, the station is now the largest drying site in the Gedeb area. Ephtah works to build coffee supply chains that are more sustainable, transparent, and collaborative, developing long-term relationships with producers and investing in product quality and local communities. At Lalesa, producers receive an immediate first payment after delivering the coffee, helping to improve the liquidity and economic stability of farming families. Ephtah also supports community social initiatives, including a childcare center for the children of Gedeb producers. Particular attention is also paid to the role of women in the supply chain. Some women producers in the area participate in the Ama Commitment program, an initiative designed to strengthen women's participation and role in coffee production and farming communities. A contemporary Ethiopia, between tradition and innovation Lalesa Anaerobic represents the meeting point between the rich tradition of Ethiopian cultivation and modern processing techniques. The local heirloom varieties, exceptional altitude, and nine-day anaerobic fermentation give life to a coffee designed for those seeking an intense, aromatic, and unconventional experience in a cup.
