It is famous as the classic family roast beef: lean, flavourful and easy to carve. The Coorong Black story Coorong Black is Midfield's premium Black Angus brand from South Australia's Coorong region: hand-selected cattle, verified grain-fed for at least 100 days at the Wanderribby feedlot near Meningie. Flavour & texture Bold and meaty, with a firmer bite than loin cuts. Grain feeding adds light marbling that keeps it juicy when cooked to medium-rare and carved thin. How to cook Best methods: oven roast, reverse-sear, or rotisserie. Stand 1 hour at room temperature and season with salt, pepper and garlic. Sear all over, then roast at 160°C, about 20-25 minutes per kg for medium-rare, or roast low at 110-120°C and sear at the end. Temperature: Pull at 52°C for medium-rare (final about 56°C), or 57°C for medium. Avoid going past medium. Rest & thaw: Rest 15-20 minutes loosely tented with foil, then carve thinly against the grain. Delivered chilled or frozen; thaw frozen pieces 24-36 hours in the fridge. Serving & pairs with Allow 200-250g raw per person. Serve with roast potatoes, Yorkshire puddings, gravy and horseradish cream.
