Lyburn Old Winchester Cheese (Great Taste Award 3 Stars)

Made at Lyburn Farm in the heart of the New Forest, Old Winchester is Hampshire's answer to Parmesan: hard, crystalline, and deeply savoury with a rich, nutty depth that builds as it ages. Lyburn's cheesemakers leave it to mature for longer than their classic Winchester, developing those small protein crystals that melt on the tongue. The flavour is complex - caramel, toasted hazelnut, a long finish with a gentle tang. Grate over pasta or risotto, break onto a cheeseboard with chutney and oatcakes, or eat it in shards straight from the packet. Pairs beautifully with a robust red or a hoppy pale ale.
