The post-harvest processing is intentionally straightforward: freshly harvested cherries are washed, floated to remove defects, then pulped dry (no water used). The beans undergo a light 72-hour fermentation before being moved to raised drying beds. The result is a clean, honest cup with a pronounced bean-forward character — no distracting fermentation notes, just clear, well-defined flavors.
