An innovative process brings forth a juicy, tart, and herbaceous cup without the caffeine overload. The Los Nogales Low-Caff process, developed by Oscar and Angie Hernández, is one of the most technically innovative coffee decaffeination methods currently used. This method reduces caffeine right at the farm, using natural substances from the coffee cherries itself to remove between 75–97% of the caffeine. What makes it different from typical decaf coffee is that everything needed for the process comes from the same coffee harvest, making it a more self-contained and farm-based approach. Finca Los Nogales is a coffee farm in Bruselas, a small town in Colombia’s Huila region, and has been in the Hernández family for decades. It first became well known when Oscar Hernández’s father, Ricaurte Hernández, won the Colombian Cup of Excellence in 2006. Today, Oscar runs the farm and has turned it into a place focused on experimentation and new ideas.
