Strawberry Burnt Cheesecake

This is not a plain cheesecake with strawberries placed on top. Strawberry emulco is folded into the batter — the strawberry flavour runs through the whole cheesecake. A strawberry jam layer is added mid-assembly for a concentrated fruity hit. Fresh strawberries and buttercream finish the surface, with a gold leaf on top.
