Winter temperatures were mostly warmer across all the wine-producing regions and the rainfall was significantly less. Average cold units and less snowfall than the previous season occurred on mountain peaks. However, it was still enough to meet the vineyards’ cooling needs. Physiological processes in the vineyard started earlier due to the mostly warmer spring and dry soil conditions. A much cooler and smaller 2023 wine grape season with outstanding quality. All grapes were hand-picked at optimal ripeness and brought to the cellar in 500kg bins. Here they were destemmed, and berries were sorted on the vibrating sorting table. The sorted grapes were then transferred to the fermentation tank with a mobile receiving tank. Cold soaked for 3 days at 10 degrees. Inoculated after 3 days with fermentation lasting another 10 days. The must was pressed and the wines were stored in older barrels for 9 months. The wine was blended and lightly filtered before bottling in November 2023. Layers of pepper spice, dried herbs, dark berries, and juicy plum. Fine-grained tannins and black olive tapenade notes on the palate Alc: 13.35% | TA: 5 | pH: 3.77 | RS: 1.9 g/L |
