This coffee is processed using aerobic cherry fermentation and developed by The Coffee Quest to enhance Castillo’s traditional profile with cherry and chocolate notes, suitable for filter and French press brewing.
- The process includes 12-hour aerobic fermentation in cherry before delivering the wet parchment.
- An additional fermentation occurs with the addition of commercial cherry concentrate and proprietary solution.
