Sant'Agnese. Vermentino 'Kalendamaia'
Toscana IGT Grape: Vermentino Grapefruit and melon. Mouth-cleaning minerality. A wine packed with vigour, it has a lovely freshness, rounded leesy fruit, concentrated herb, lavender. 14.5% Sant'Agnese producer page Vermentino is found in the coastal region of Tuscany; from Corsica, Sardegna, Liguria, Piemonte to South of France. Paolo's is quite a unique take: he planted a Corsican clone, one he feels has more perfume and spice, a more interesting spectrum of flavours. Usually the vine is well suited to fresh, young simple wines; there is far more to it though, rarely known for its its ability to age, vermentino will mature for many years, keeping its freshness and developing an almost Riesling-like character. There is a limited pool of great white wine to call on in Tuscany and Kalendamaia is a step towards rectifying this. Guyot trained vines at a density of 5500plants/ha, planted on the flatter part of the land which has deeper clays. After harvest the must macerates for 3 days at 5°C prior to fermentation in concrete tanks.
