Tasting notes Complex aromas of cassis, black cherry, sandalwood, cinnamon, liquorice, oak, and toast. The palate is rich, combining concentrated fruit and umami with sweet oak nuances. Fine tannins provide structure, resulting in a balanced yet powerful expression. Elegant and composed, the wine continues to evolve in the glass over time. Food pairing Beef steak, hamburger steak, cassoulet, braised pork, Moroccan-style lamb, bean curry, spaghetti bolognese, teriyaki chicken, yakitori (tare), miso-based dishes, beef cheeks braised in red wine, sukiyaki, grilled eel with sweet soy glaze (kabayaki), Comté cheese. Winemaking COCO TOARU Series 2021 Zweigelt is made from hand-harvested grapes grown in Yoichi, Hokkaido. This wine was produced at 10R Winery in Iwamizawa, Hokkaido, by Bruce Gutlove, director of COCO FARM & WINERY and winemaker at 10R Winery. The grapes were lightly destemmed and fermented at moderate temperature using indigenous yeast, followed by approximately three weeks of maceration before pressing. The wine was aged for 14 months in oak barrels (20% used American oak, 10% new French oak, 70% used French oak), then lightly racked, blended, and bottled unfiltered on September 7, 2023. Zweigelt is a grape variety developed in Austria in 1922 by crossing Saint Laurent and Blaufränkisch. Well suited to cooler climates, it allows for the production of deep, structured red wines even in Hokkaido. This wine reflects the potential of Japanese terroir and the collaboration between growers and winemakers.
