DESCRIPTION: Tirrena is a durum wheat semolina pasta. Semi-integral and unrefined, it is rich in fiber, polyphenols and vitamins. RAW MATERIAL: The varieties of grains used are: Senatore Cappelli, Khorasan and Evoldur 100% Toscana. PROCESSING: 100% artisanal. Tirrena is made following a natural processing method that has been handed down for generations. The pasta is bronze drawn and then slowly dried in static cells (72 to 144 hours) at temperatures below 38°C to keep its organoleptic qualities intact.This gives the pasta, in addition to its hazelnut color, high digestibility and an extraordinary ability to absorb seasonings. It is precisely this type of processing that makes tirrena a living pasta that smells of wheat.
