Chain Pier Distillery was set up in 2019 as an experimental distillery and a pre-cursor to the new Bonnington Distillery in Edinburgh. It was the first time whisky had been distilled in the City of Edinburgh for over 100 years. This cask is rare. And when we say rare, we mean extremely rare. The distillery only created 39 casks before it was shut down. This is from cask #32, which was a 1st Fill PX Barrique. For this particular release - Tri Carragh have finished a small amount in a 2nd Fill, Ex-peated Red Wine Octave adding superb layers of flavour. Chain Pier’s youthful spirit stands up impressively well to this treatment, retaining energy and structure beneath the cask influence. The PX maturation contributes dense notes of dried fruit, treacle, chocolate, and dark sweetness, while the red wine octave lifts the profile with fresher berry tones and a slightly drier finish.
