This is not your average poolside pink. Bright, savoury and wonderfully fresh, Les Prunes feels more like a proper Mediterranean table wine than a simple rosé — elegant enough to impress the wine geeks, but dangerously easy to drink in the sunshine. Made by Celler del Roure in the hills of Moixent, Les Prunes is produced entirely from the indigenous Mandó grape — a historic Valencian variety that the estate has helped rescue from near extinction. The vineyards sit around 600 metres above sea level on poor chalky and clay soils, helping preserve freshness and aromatic lift despite the warm Mediterranean climate. The wine is made using native yeasts and a beautifully traditional approach in the cellar. After direct pressing, fermentation takes place naturally before the wine spends around four to six months ageing in buried clay amphorae — an old Valencian technique that gives the wine texture, purity and a subtle mineral edge without masking the delicate fruit. There’s loads of bright red berry fruit here, but also lovely savoury detail — citrus peel, floral lift and a gentle saline character that makes the whole thing incredibly moreish. Bone dry, beautifully fresh and quietly complex, this is rosé with proper personality. Serve it properly chilled with grilled prawns, tomato salads, tapas or salty jamón.
