The nose is a subtile blend of orange blossom, peach, Haribo peach, pineapple, fresh thyme and cardamom. It's so integrated, so in sync, that we can almost picture the orchestra's conductor before the stage. The palate matches the nose. It's a skilful balance of power and delicateness, a pair of iron hands in velvet gloves juggling with a firm yet airy tannic structure, a freshness provided by the thyme, a bright acidity of passion fruits and a lingering spiciness. Long finish. Incredible wine with no added sulfites. A life lesson that some risks are worth taking. Getting to know Paul's background as an international ballet dancer is key to understand his wines and this particular cuvée. Elegant, delicate, humble, honest and sensitive are the words that comes to mind when tasting this wine. More than traditional tasting notes, I'd be tempted to describe it as a ballerina dancer performing perfect yet, effortlessly looking moves.
