Grown in the Netherlands, sugarloaf cabbage takes its name from the tall, conical head that narrows to a point — denser and sweeter than a standard round cabbage, with pale, tightly packed leaves and none of the sulphurous edge that puts people off cooking with cabbage. The tight structure holds up exceptionally well to slow cooking, braising down into something silky and mild, while raw shreds bring a clean crunch to slaws with real sweetness behind it.
