OOLONG TEA: Tung Ting, Taiwan

Tung Ting Oolong tea, Taiwan Flavour: vegetal, fruity, creamy Careful processing sees this tea oxidsed to 30% then rolled, heated and compressed multiple times, releasing the leaves’ aromatic oils and creating its lovely beaded shape. Tung Ting is a high mountain oolong and can be translated as ‘climb to mountain with cold feet’. The infusion is refreshing and moreish with vegetal, fruity and creamy notes. October 2025 harvest. Preparation: Steep for 3 minutes at 90°. Two infusions. Infusions: specialty tea leaves can all be steeped at least twice, and often more, so each 3 gram serve (150 mls - a standard teacup size), will give you two cups ('infusions') if you steep the leaves twice.
