In the cool hills of Marcala, Roger owns three small farms, including Las Flores, that grow an attractive collection of heirloom arabica including Yellow Catuai. It should be noted that one of Roger's Catuai lot received an incredible 92 point cup score at the Honduras Cup of Excellence! Thanks to his high standards and attention to details like ripe picking and slow drying on raised mesh platforms, Roger is able to elevate varieties like Yellow Catuai and hybrids. In production, Sr. Dominguez pushes the fermentation of his Natural process to yield a decadent overlay of winey red-purple fruit and cacao. We capture this distinction through a light-medium roast, giving cherry pie and grape cider aromatics that begin peaking in a pillowy, juicy cup around two weeks off-roast.
