Goldstone is the closest we've come. We've been flirting with oak in our whites for a while. For four or five years we've been putting our best parcel of Hills Fiano into new 500-litre French puncheons: big enough that the oak stays polite, new enough to add some silk and spice. It shapes the texture without stealing the show. The vineyard is Forreston, up in the northern Adelaide Hills, 350 metres above sea level on mica schist, ironstone and alluvial quartz-shot clay, picked on 12 March. Stone fruit, honey, a little nuttiness, and an acid line you could set your watch by. Our top-shelf Fiano.
