024 FINCA LA LAJA (125g)

Apple blossom, white peach, and clementine. Delicate, floral, and pleasantly sweet. This Gesha comes from Finca La Laja in Cauca, Colombia. It's part of a project focused on exploring what individual coffee varieties can offer when they're grown and processed with care - a whoooole lot of care. The processing is relatively straightforward: cherries are depulped on the day they're picked, fermented for 12–36 hours, then thoroughly washed. No fancy, experimental processing. Just a whole new level of dedication to the old ways, bringing out the best in this lovely Gesha.
