He was in charge of the royal stables of Versailles. Renowned for his hard work and leadership skills, he was appointed head of the King's Pages School in 1782 TERROIR Located in Reims, the 'City of Coronations', the school trained future cavalry elite. Just as all renowned Champagne's, Rémy Chastellier champagnes are a blend of excellence and pleasure, produced on rich unique terroirs divided into ler Crus and Grand Crus. VITICULTURE Hand-harvested whole bunches adhering to strict Champagne yield caps and sustainable viticultural guidelines to preserve fruit quality and natural acidity WINEMAKING The winemaking process follows the traditional Méthode Champenoise, beginning with a gentle whole-bunch pressing to extract only the purest free-run juice. Primary fermentation takes place in temperature-controlled stainless steel vats to preserve vibrant fruit expression, followed by full malolactic fermentation to smooth out the acidity. To ensure consistency and depth, the base wine is blended with carefully selected reserve wines before entering its secondary fermentation in the bottle. The champagne then ages on its lees in cool chalk cellars for 18 to 24 months, acquiring its signature notes of toasted brioche and white blossoms. Finally, it is disgorged and finished with a balanced Brut dosage of approximately 8 to 10 grams of sugar per liter. TASTING & FOOD PAIRINGS Light yellow-gold. Endearing nose mixing fruit, flowers and a compelling herbal touch. Lovely roundness, softness and freshness on the palate. The nose aromas linger pleasantly in this convincing Champagne. Rémy Chastellier Brut Grande Réserve pairs exceptionally well with fresh oysters, fried chicken, roasted poultry, and soft cheeses like Brie. Its vibrant acidity and fine bubbles cut through rich, salty, or fried foods, while its Pinot Noir structure supports light meats and creamy cheeses.
