Wines are produced in the vineyards of Languedoc near Limoux and Gard, with a wide temperature range between nights and days. Different soils contribute complexity and depth. Grapes are destemmed and crushed, fermented in tanks twice daily at about 27°C, and micro-oxygenation occurs before malolactic fermentation to enhance color and tannins.
