Chrysalis - Guatemala
We love when a coffee breaks the mold, and Ana Nohemi Perez delivers exactly that. She operates her family farm with her mom and siblings in the small town of Com, in the heart of Huehuetenango, Guatemala. Ana grows a field blend variety called Chalun, named after the common shade tree of the region. The coffee is depulped, washed multiple times with clean water, and dried in the sun daily. The profile is more akin to a washed Ethiopian yet carries the body and texture of a Guatemalan. Expect clean, soft fruit like nectarine and blueberry with vanilla florals.
