$62.00 per bottle | $372.00 case of 6 The Origin: The wine that started everything — 100% Tinta de Toro from the single 3-hectare parcel of ungrafted vines planted in 1919, on pure sand at ~700 m in El Pego. Named for Álvar's grandfather. The Profile: Proof that Toro can be perfumed. Aromatic and lifted — wild berries, red cherry and plum with violets, dried herbs and a stony minerality; the 2021 is a touch darker and riper, juicy and primary, with fine, gently gripping tannins and very good balance (12.4% alcohol). Elegant where most Toro is heavy. 94 points, Wine Advocate. The Craft: 60% whole-cluster, wild-yeast fermented with a long maceration and daily soft pigeage, then aged about two years — a year in mostly neutral 300–600 L barrels and foudres, a year in concrete. Ungrafted, own-rooted, century-old vines. ~12,400 bottles. The Pairing: Serve at 15–16°C with herb-crusted lamb chops, roast game, or an aged Manchego.
