Our exclusive Hand-Filled Winter Series invites you to taste our Australian Single Malt exactly as it rested in the barrel. Bypassing the standard filtration and proofing processes, each bottle in this strictly limited release is drawn straight from the cask. This unadulterated approach captures the raw essence of the spirit and the profound influence of the wood, delivering a rich, full-bodied dram perfectly suited for the winter months. Because these are single-cask releases, yields are dictated entirely by the barrel—meaning once these bottles are gone, they will never be replicated. Choose your expression: Ex-Double Bourbon Cask A masterclass in depth and sweetness, shaped by a double bourbon maturation. 54% ABV Nose: Rich caramel, honey, and toasted oak. Palate: Deep layers of creamy vanilla and baking spices. Finish: Beautifully smooth, sweet, and lingering. Pedro Ximenez (PX) Cask A deeply decadent, syrupy dram that captures the heavy richness of premium sherry oak. 50% ABV Nose: Dark chocolate, sticky raisins, and dried figs. Palate: Rich plum pudding, roasted walnuts, and a heavy syrup sweetness. Finish: Long, warming, and luxuriously spiced. Toasted Chardonnay Cask A beautifully unique and elegant whisky, heavily influenced by the character of toasted wine oak. 49.5% ABV Nose: Crisp green apple, toasted coconut, and sweet butterscotch. Palate: Freshly baked brioche, bright tropical fruits, and toasted oak. Finish: Vibrant, creamy, and elegantly dry. Botrytis Cask matured for six and a half years in Australian fortified wine casks, this release pours with a rich, viscous texture and a lush, dessert-like nose. 53% ABV Nose: Honeyed apricot, honeydew, burnt caramel, golden syrup, and soft florals. Palate: Rich, viscous, and sticky-sweet with notes of sweet white wine. Finish: Lingering indulgence with continuous sweet and floral undertones.
