Campo de Borja, Spain – 100% Tempranillo Deep ruby in colour, with intense aromas of ripe black cherries, blackberries, toast, cocoa and caramel. Full-bodied and juicy on the palate, structured yet balanced, with silky tannins carrying through to a long finish. Pour this with grilled or roasted red meats, aged cheeses, or anything with a bit of char to match its structure and toasty oak notes. It's a wine built for the table — think braised short rib, a good steak, or a cocoa-dusted dessert to echo those caramel notes. This is a single-vineyard wine from dry-farmed old vines over 35 years old, grown in sandy alluvial soil and hand-harvested in small 20 kg baskets. It's made as a natural wine with spontaneous fermentation and aged 24 months in French oak, with under 50 mg/L sulfites. Only 880 bottles were produced, and with just two harvests of this wine in existence, once it's gone, it won't be back on our shelves.
