Grown between 2235 - 2350masl in Sidama's Bura district, this exceptional lot comes from the Gara Agena Washing Station, located near the Geta River. Produced from a group of smallholder farmers, the cherries are selected with remarkable precision. 90% perfectly ripe red cherries, with only 5% semi ripe and 5% overripe fruit. In many cases, the cherries are harvested within a single day, creating a highly consistent lot. The coffee is then processed and stored separately from other production, resulting in only a small number of bags each year. Once harvested, the cherries are immersed in water to remove floaters before undergoing an 8 hour soak. They are then depulped and fermented for 36 hours, allowing the coffee's clarity and character to develop. The parchment is carefully dried on raised beds in a shaded, well ventilated environment for 21 days, ensuring a slow and even drying process.
