Smoked in small batches at one of the world's few remaining traditional smokehouses. Fresh Atlantic salmon is smoked over fallen oak logs, apple wood and oak chardonnay barrels - a time-honored process that gives off far less smoke than the modern woodchip method. The dark meat is then hand-trimmed away to leave a deep coral-colored fillet.
