Casa de Uco El Salvaje Organic Cabernet Franc

El Salvaje (the wild one) earns its name, this is Cabernet Franc with nothing to hide behind, no oak to soften or disguise it. Argentina built its reputation on Malbec, but Cabernet Franc is the variety ambitious winemakers are exploring next. It’s lighter on its feet but with the structure to hold its own at the table. Casa de Uco grows the fruit at 1,280 metres in IG Los Chacayes, a recently designated and exciting sub-region of Mendoza's Uco Valley. Hand-picked, fermented with wild yeasts, and aged entirely in concrete rather than wood, so what reaches the glass reflects nothing but the vineyard. Try it with grilled red peppers or charcuterie.
