BOUQUET: The aroma is lively and rich in fruity notes, as well as persistent hints of spice. TASTING NOTES: On the palate, the wine is warm and rich, with refined tannins and a very long finish. SERVING TEMPERATURE: 16°C FOOD PAIRINGS: Its versatile character allows for a wide variety of pairings: from classic Neapolitan pizza to dishes featuring melted cheese, as well as smoked or roasted meats. ADDITIONAL NOTES: Maceration takes place in stainless steel tanks for 10–15 days, during which the *délestage* technique is regularly applied. This is followed by maturation in new 225-liter French oak barrels for 15–20 months. The wine is then bottled and undergoes a long period of bottle aging.
