Guji Shakisso - Ethiopia (200g)
Hadeso washing station sits at 1,850m in Shakisso woreda, Guji Zone, southern Ethiopia. Around 500 smallholder farmers deliver cherries from farms near Dambi Uddo, where coffee grows at elevations up to 2,100m alongside maize and grains under native shade trees. Established in 2017, Hadeso is managed by Testi Coffee, a family-owned Ethiopian company recognised for specialty coffee expertise. This lot blends Kurume and Wolisho landraces with JARC selections - varieties chosen for disease resistance and cup quality. Kurume produces delicate, floral notes; Wolisho and JARC selections add complexity and resilience. Cherries are hand-harvested and pulped within 6-8 hours, then fermented for 36-48 hours with frequent water changes. After washing and grading, parchment dries on raised beds under shade for 5-7 days, hand-sorted throughout to ensure uniform quality.
