It is usually eaten as an antipasto, with cured meats or cheese, and sometimes added to salads. Giardiniera is unpasteurised, which means it continues to ferment and retain all of the good bacteria for maximum health benefits! In Chicago, giardiniera is often used as a pizza topping and in New Orleans it is added to subs.
