Löjrom is fish roe from the vendace (Coregonus albula), a small salmonid that lives in the northern part of the Bothnian Bay. Swedish löjrom is known for its pure, refined flavour and distinctive minerality. Swedish löjrom has an intense, balanced flavour with lightly salted notes and an elegant finish. The roe grains naturally vary in size throughout the fishing season, affecting both texture and mouthfeel. Löjrom is fished in areas of the Bothnian Bay with cold, oxygen-rich water, where the fish feed on plankton, crustaceans, insect larvae and naturally occurring minerals. The fish Vendace (Coregonus albula) rarely grows longer than 20 cm in the cold waters of the Bothnian Bay. A female fish typically weighs 20–30 g, of which the roe content makes up approx. 3–5 g. The size of löjrom varies throughout the fishery: Start of the season: approx. 0.8 mm End of the season: up to approx. 1.3 mm The natural variation creates differences in structure and the characteristic “pop” effect when served. Shelf life after thawing 5 days when stored refrigerated.
