Finca La Inmaculada is a family-owned farm established in 2005. At 1,900 meters above sea level, cherry maturation is slower, promoting density and structural clarity in the cup. Since acquiring the property, José Gabriel Chamba has intentionally limited production (approx. 460kg of green per year) to support steady, sustainable growth. This allows him to focus on quality, consistency, process refinement, and to pay close attention to plant health and harvest management. Criollo is an older, locally adapted variety derived primarily from Typica, which traces back to Yemeni landraces. In southern Ecuador, Criollo represents generations of on-farm seed selection and geographic isolation rather than a stabilized modern cultivar. For this lot, only fully ripe red cherries are harvested and immediately depulped before entering a 48-hour controlled fermentation and washing. Coffees are then dried under shade to regulate moisture loss, preserve clarity, and protect aromatic compounds.
