Indian Monsooned Malabar is one of the most distinctive and storied varieties in the world of specialty coffee. Its unique character is forged by a rare processing method that mimics the effects of the long sea voyages of the 19th century, resulting in a flavour profile that is remarkably smooth, heavy-bodied, and entirely devoid of traditional acidity. The key characteristics of India Monsooned Malabar are: The Monsooning Process: After harvest, the green coffee beans are stored in open-sided warehouses along the Malabar Coast of Karnataka. From June through September, they are exposed to moisture-laden monsoon winds. Over three to four months, the beans absorb humidity, causing them to swell to nearly twice their size and turn a pale golden-straw colour, a transformation that fundamentally alters their chemical makeup. Exceptionally Low Acidity: The monsooning process strips away the natural brightness and sharp acidity found in most Arabica coffees. This results in a mellow, neutral pH cup that is exceptionally gentle on the palate, making it a favourite for those who prefer a smooth, non-tangy coffee experience. Flavour Profile: Monsooned Malabar is celebrated for its deep, rustic, and savoury characteristics. Expect a heavy, syrupy mouthfeel with prominent notes of earthy cedar, tobacco, and toasted nuts, finished with a subtle malty sweetness and hints of dark cocoa. Historical Heritage: Originally a "happy accident," the flavour was created when coffee was shipped in wooden sailing vessels from India to Europe. The humid sea air aged the beans during the six-month journey.
