Origin: Boquete, Panama Roast Level: Light Process: Yellow Honey - Raised Bed Dried Varietal: Geisha Tasting Notes: Osmanthus, Orange, Apricot, Peach Finish The Alto Quiel growing area sits at 1,500–1,900 metres in Chiriquí Province, where volcanic soil, cloud forest microclimate, and pronounced diurnal temperature variation combine to slow cherry development and concentrate aromatic compounds across an extended maturation window. In a yellow honey process, the cherry is de-pulped and the majority of the mucilage is left adhering to the seed. The seed dries on raised African beds with its sugars still engaged, slowly over three to four weeks in the highland air of Boquete, turned at regular intervals to prevent localised fermentation. This is Regional Geisha. A selection defined not by a single estate but by the altitude band and microclimate of Alto Quiel itself.
