The smaller buds are picked earlier, before the flower opens, which gives them a softer texture and a more refined briny flavor than the chunkier ones you usually see in bulk jars. Use them on smoked salmon, in chicken piccata, in puttanesca, or anywhere you'd reach for a regular caper but want a cleaner finish.
