A unique and innovative white wine from Clos Bateau, born out of creative necessity after the loss of part of the Sauvage. Babatise combines biodynamically grown Sylvaner, Riesling, and a touch of Gewürztraminer from Alsace, sourced from schist-rich soils. With a peachy hue and a velvety texture imparted by aging on the lees of Mayga (Gamay), this wine defies convention while delivering a fresh and intriguing experience. Grapes: Sylvaner, Riesling, Gewürztraminer Flavor Profile: Fresh and velvety, with unique depth and complexity from aging on Gamay lees. Vinification: Direct press, aged in fiber tanks, followed by 3 months of aging on Mayga (Gamay) lees in used barrels, enhancing depth and texture.
